Calm, gentle, horse breeds?

I am looking for a horse. I am preferring a trail horse. I would like a calm, good natured, and good listener. I am going to research thoroughly before I go and get a horse, but I am in need of some personal experience with breeds. I have fallen in love with the Missouri Fox Trotter and Tennessee Walker. I also seem partial to Quarter Horses. If anyone out there has owned any of these breeds, or others that they think would be a good fit, please let me know the pros and cons of each breed. I am not really picky, just want a good trail horse. Thanks for your time to help me out.
I understand all horses are different, but I just want a generalization. I volutneer at a theraputic riding center, but I wanted an outside opinion. TWH and MFT are preferred so anyone with experience on them would be very helpful.
And I want to know, is the paint an actual breed, or is it just a color?

I have a MFT, and she's one of the most reliable trail horses I know. She's totally calm, tolerant, smooth, and not spooky at ALL. She'll go anywhere I point her head.

I got her just after her third birthday, and she only had 30 days on her. I trail rode her all the time and she was AMAZING. I used to ride her with these two Paso Finos (10 and 12 years old), and she was way better than them. Whenever we got to an obstacle that they wouldn't cross, she always would.

Just today, I was riding her and we got chased by a loose, barking dog TWICE. She didn't even blink. A couple weeks ago, a wild boar came flying out of the woods next to us, and she didn't even care.

Every MFT I've met has been just as calm as she is.
